The Art and Science of Ceylon Tea Plucking

Mount Havana welcomes you inside this bustling village and demonstrates the exquisite craftsmanship that goes into each leaf harvested. The Art and Science of Tea Plucking Ceylon Tea’s distinct flavour is also governed by the fact that it is exclusively handpicked, primarily using the two leaves and bud method, and nearly 93% of Ceylon Tea produced annually is produced using artisanal and orthodox methods, as opposed to the CTC (Crush, Tear, and Curl or Cut, Tear, and Curl) method used globally.

Tea plucking is an intricate art that demands precision and skill. The process of plucking ‘two leaves and a bud’ is more than just a tradition; it demonstrates the craftsmanship that defines the industry. This rigorous process ensures the highest quality tea, which affects the flavour, aroma, and colour of the tea. According to studies, the process of plucking has a significant impact on the tea’s antioxidant content, which is praised for its health advantages ranging from inflammation reduction to heart health enhancement.

From Plucking to Brewing

After the leaves are picked, they begin a transforming journey. At Mount Havana, you can see the phases of drying, fermenting, and roasting, with each step revealing a new layer of scent and flavour. The plucked tea leaves are weighed and accounted for, and then transported to the manufacturer. The leaves are then weighed and collected in coir sacks, transported to the facility, and put out on troughs.

Plucking the leaf begins the withering stage, during which the leaf becomes flaccid and loses water until it reaches a withered moisture content of 55 to 70% by weight, depending on the kind of processing. In the traditional method, fresh leaves are spread by hand in tiny layers onto trays or portions of coarse fabric known as that. It is then allowed to wither for 18 to 20 hours, depending on a variety of conditions such as air temperature and humidity, as well as size and moisture content.

This is then transferred down to a rolling machine, which smashes the withered leaves before sending them through a heated air tunnel to eliminate moisture. The process passes through a rapid sifter, which separates the various mesh sizes. In a tea factory, different tea leaves are tasted and the colour changes are timed. The process culminates in a tasting session, during which you may savour the fresh, vibrant tea that is the direct result of your hard work and learning.

From 8:00 a.m. until 9:00 a.m., Mount Havana provides a unique opportunity to take part in tea plucking.
